Ingredients for 1 serving :
¼ onion
½ tomato
Juice of 1 lemon
¼ bell pepper
1 portion couscous
Tofu cubes
Chili sauce
Green onions
Coriander
Jalapeños (optional)
Dice ¼ onion and ½ tomato into small squares. Mix with the juice of one lemon, adding salt and pepper to taste.
Slice ¼ bell pepper into strips and sauté in a pan with water until softened.
Cook the couscous according to the package instructions.
Sauté cubed tofu in a pan with a bit of chili sauce until crispy.
On a plate, start with a bed of salad, then layer the couscous, bell pepper strips, onion, and tomato mix, along with the tofu.
Garnish with chopped green onions, coriander, and jalapeños if you like extra spice.
